The Importance Of Protein

The body requirements include essential fatty acids, carbohydrates, complete proteins, and every known vitamin and mineral. If only unrefined foods are eaten, nutrients still unknown will probably be furnished. Hundreds of thousands of animal experiments have shown that if a single nutrient or any combination of nutrients is omitted, disease is produced. There can no longer be doubt but that people produce illnesses in themselves by selecting diets as faulty as those that cause disease in animals. Yet, provided injury is not irreparable, a diet including all nutrients in ample amounts can restore health. Because this fact has been repeatedly proved beyond question, no person--not even a physician, in my opinion--has the right to impose an inadequate diet on another individual. There are times, of course, when these rules cannot be applied, but during such periods health is being tom down rather than built up.

During severe stress (illness) as much as 135 grams of body protein--the amount in seven steaks or 4 quarts of milk--may be destroyed in a single day; and the body cannot synthesize the "non-essential" amino acids rapidly enough to meet the demand; hence persons hoping for a speedy recovery would do well to count protein grams. Literally hundreds of persons who have an egg at breakfast and meat at dinner have assured me that they eat a "high-protein diet," when they have actually obtained approximately 25 grams daily. During mild illnesses, 80 to 120 grams daily is sufficient, but more is often advantageous. Foods supplying complete proteins of the highest biological value are, in descending order: eggs; milk and milk products; liver and other glandular meats; muscle meats, fish, and fowl; yeast, wheat germ, soy flour, and a few nuts. Because the proteins in cereal grains, legumes, and most nuts lack some of the essential amino acids, they are of value as proteins only when eaten with eggs, milk, or meat or with each other so that all essential acids are furnished. The most rapid recovery from illness occurs if protein is supplied largely by eggs, milk, cheese, and glandular meats.

When rats are given half of the essential amino acids during the day and the other half only at night, they Develop symptoms of a severe protein deficiency. Moreover, , if an essential amino acid is lacking or a non-essential one is supplied in excess, dangerous imbalance occurs, causing large amounts of the essential amino acids to be lost in the urine. Gelatin, for example, lacks so many essential amino acids and supplies such an excess of glycine that it inhibits healing and can be toxic when added to an otherwise adequate diet.

It is almost impossible to meet the protein needs of an ill individual unless a reasonably palatable drink is taken prepared with fresh milk fortified with foods supplying all the amino acids. Because yogurt and acidophilus milk are largely digested during the culturing process, they are particularly well tolerated by ill and elderly persons. When prepared at home and fortified with non-instant powdered milk, they can contain twice the amount of protein, calcium, and vitamin ~ at a fraction of the price as do the commercial products; hence an electric yogurt maker--not of glass--is a good investment.

The protein intake can be tremendously increased by fortifying such foods as cereals, hotcakes, waffles, muffins, and cookies with wheat germ, soy flour, and non-instant powdered milk.

Instant powdered milk is excellent to add to fresh milk for drinking, but it makes foods gummy when used in cooking. Instantized foods, like puffed wheat compared with the natural product, are bulky; ½ cup of non-instant powdered milk, available at health-food stores, equals a quart of fresh milk, compared with 1 1/3 cups of the instant variety. Any form of powdered milk, however, has been somewhat harmed by heat and should not be substituted for fresh milk.
